Winter Truffle

The Black Winter Truffle also known as Tuber melanosporum the Périgord truffle or the ‘black diamond’, is prized by chefs all over the world for it’s strong powerful flavour.

AROMA

The winter truffle has a much stronger flavour and aroma than the summer truffles. Everyone’s description of the aroma is unique but we would describe it as powerfully earthy with sweet and nutty undertones.

SEASON

The winter truffle is found and cultivated in northeast Spain, southern France, Italy, parts of the USA, South Africa and Australia. This species likes a hot Mediterranean climate and good rainfall, it is found mainly in association with oaks and hazel trees in alkaline soils.

VISUALS 

Black skinned with small pyramid shaped lumps, inside they have have a black flesh marbled with fine white veins.

Sizes can vary from hazelnut size up to the size of a grapefruit.

CLIMATE AND HABITAT
